White beet and black eyed bean salad
Ingredients:
600gr black eyed beans
1 kilo white beet
1 cup extra virgin olive oil
2 lemons, juiced
Preparation:
Let the beans soften for 8 hours in cool water. Strain and transfer them to a pot with boiling water. Let them boil for 30 minutes to soften well. Rinse the white beet well and remove the hard parts and yellow leaves. Put the white beet leaves in the pot with the beans and boil for 6-7 minutes. Add lemon juice, salt and olive oil in an air-tight jar, seal the jar with its cover and shake it to mix the dressing ingredients well. Remove the jar cover and pour the dressing over the salad.
